Chicken Cabbage Salad
This is my most favorite Asian salad recipe. It is a combination of a couple recipes I have tried and made over the years. It is sweet, salty, crunchy, and savory. It doesn't last more than 24 hours in my household!
Chicken Cabbage Salad
Ingredients:
1 head of cabbage, shredded
2-4 chicken breasts, cubed
5-6 green onions (I prefer more)
2 packages of chicken or oriental-flavored Ramen Noodles, crumbled
3 T. sesame seeds
1/2 c. sliced almonds and 1/2 c. coconut, fried in butter and salt
1 can of pineapple tidbits or rings, cut up, and save juice for dressing
2 (11 oz.) cans mandarin oranges
Dressing:
3/4 cup oil oil or vegetable oil
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup white vinegar
2 seasoning packets from the noodles
2-3 tablespoons of sugar
Pineapple juice from the can
Directions:
Combine cabbage, green onions, chicken, and Ramon Noodles. Add the sauce, fried almonds, and coconut. As for the dressing, put the ingredients in a glass jar and shake well to combine. Toss the dressing together with the other ingredients. Carefully fold in pineapple and mandarin oranges. Let the salad marinade for a couple hours. The longer it chills the better it tastes! Serves 8.

I would say it lasts maybe 12 hours in our house sweetie!!! Whoohooo for the yummy Chicken Cabbage Salad!
