Fall Family Fun Layouts

Fall is my most favorite season! I love seeing the beautiful leaves change into autumn colors and there are so many fun activities going on too. Some of my most favorite fall memoires are driving up the canyon, hiking in the mountains, going to a pumpkin patch, getting lost in a corn maze, going to a haunted house, and going to a state fair.

Creamy Coleslaw

A couple days ago, we made BBQ pulled pork in the crock pot.  For our side dish, we decided to make a creamy coleslaw to go with it.  Here is the recipe we came up with using some things from our garden.  This would be a great side dish with baked chicken, pork chops, BBQ sandwiches, etc.
Creamy Coleslaw
Ingredients
2 c. chopped green cabbage
2 c. chopped purple cabbage
1/2 c. shredded carrots
1/4 c diced green pepper
2 T. chopped onion
1/4 snipped parsley
Dressing
1/2 c. mayonnaise or salad dressing
1 T. vinegar
2 tsp. sugar
1 tsp. celery salt
1/4 tsp. salt
few dashes of ground pepper
Directions
In a large bowl, combine cabbage, carrots, green peppers, onions, and parsley. For the dressing whisk together mayonnaise or salad dressing, vinegar, sugar, celery salt, salt, and pepper in a glass measuring cup.  Pour dressing over cabbage mixture and toss together lightly. Cover and chill.

My Recent Trip to the Local Library

Sadly, it has been a while since my last trip to the library or when I last read a book to be honest.  On a dreary rainy summer day, I went on a quest to the local library and searched for books from authors I have never read before that were on my "to read list" from my Good Reads on my iPhone (a very handy application right at my finger tips, while away from home).  A couple days later while suffering from a terrible head cold and lack of sleep, it was the perfect time for me to get engrossed in fictional lives! The following books below, I highly recommend that you read them when you have the time or able to reserve them from your local library!  They were all fabulous books that I thoroughly enjoyed very much and thankfully they made my life more bearable while sick!  
Along for the Ride by Sarah Dessen
My thoughts: Along for the Ride is the first book that I have read by the popular New York Times Bestseller young adult author Sarah Dessen who has a collection of other books that I look forward to reading in the future. To my surprise, I read Along for the Ride in less than 24 hours!  I was very sad when I reached the last page of the book because I fell in love the all the characters and wanted to read more about them!  Each character in the book had some flaws and by the end of the book they each transformed realistically into something better.  There were characters you will love and hate in the story. The main character Auden made the biggest transformation of all and it was truly inspiring to watch unfold!  Auden never experienced life beyond her academic studies and she was socially awkward. She discovered more things about herself after spending one summer in Colby with her father, step mother, and baby step sister near a beachy board walk.   Along the way, Auden made friends, discovered her strengths/weaknesses by taking some risks, explored new experiences by setting aside logic, and allowed herself to be free to an open mind.  It was an easy and fantastic read that you will not be able to put down!  
Mr. Darcy's Diary and Mr. Knightly's Diary by Amanda Grange
My thoughts: If you are a huge fan of Jane Austen's books then you must read Amanda Grange's books, they will enlighten you!   Amanda Grange retold the classic stories Pride and Prejudice and Emma from the leading male character's point of view (Mr. Darcy and Mr. Knightly) through journal entries!  Darcy was a devoted brother and friend, yet a stubborn and arrogant gentleman. In Darcy's eyes Elizabeth was intelligent and witty, but he struggled with her less agreeable family members and lower rank in society!  It was funny how he battled against his affections for Elizabeth! I absolutely loved how Mr. Darcy's Diary included a couple months after his marriage to Elizabeth Bennett.  I always tried to imagine what married life was like for them and I was satisfied with her take on the "happy ending". As for Mr. Knightly's Diary, I find it interesting that he struggled to admit his true affections for Emma until somebody pointed it out to him.  The depth of his love for Emma was obvious in the beginning since he had such high expectations of her of being a proper refined lady and became extremely jealous when he saw Emma interacting with Frank Churchhill.  Also, Mr. Knightly was annoyed by some of her character flaws of silly matching making and arrogance, but at the same time he still saw lady like greatness in Emma too. Both books are simple and enjoyable reads!  After reading these two books, it made me want to re-read Austen's original classic stories all over again!

Memories of Mom and Me PJ Party

In May 2009 while being an activity leader, we planned an extraordinary mother and daughter activity around Mother's Day.  We had a very fun, silly, girly, and uplifting PJ party!
Decorations: We did a living room theme. We moved all the couches and chairs from the foyers into the gym, brought blankets  pillows, bean bags, rugs, fake plants, lamps, pictures (from the church library), stuffed animals, large screen for the movie, etc.
Mom and Me Photo Shoot: In the foyer when you first walk in a church, we set up a bedroom backdrop using a toddler bed, bedding, pillows, flowers, pictures, stuffed animals, etc.  The photographer had the mother's holding a Book of Mormon while the daughter was holding a journal and lounging on the bed.
Manicures and Hair: The girls and mothers painted each other's finger and toe nails while listening to some calm music.  Then we had a wacky hair contest.  The girls were given hair supplies such as rubber bands, clips, barrettes, flowers, ribbons, pipe cleaners, etc (most were from the Dollar Store) to style Mom's hair.  We passed out papers and pencils to vote on the best hair.  As for the winners, they each received a chocolate candy bar!
Spiritual Message: We divided everyone into three groups.  We did 10 minutes for each rotation. The leaders discussed the importance of daily prayers, reading scriptures, and keeping a journal.
Let's Get Crafty: We set up chairs and a long table for a craft station. We bought some cheap scrapbook supplies from Walmart (paper, elements, frames, and markers) to build a scrapbook page or frame.  The purpose of the craft was for them to scrap or frame their photographs, which we took during the activity.
Movie and Popcorn: As for the film, we watched Reflections of Christ DVD while eating popcorn, which you could buy here.  Lastly, the primary president bore her testimony about all the things we learned that night and we had a closing prayer.

Scaling New Heights:American Fork Canyon

Fifteen years ago, John and Jen fell in love... 
For our 15th anniversary on August 14, 2012, we went up American Fork canyon for our milestone anniversary date!  Since we love the great outdoors, we thought it would be fun to explore some new places and go hiking.  We packed a lunch, camera, sunglasses, sunblock, camel backpacks, etc and headed towards the rocky mountains.
  First, we stopped at The Timpanogos Cave Visitor's Center to purchase our tickets for the breathtaking (literally) 1,092 feet hike later in the afternoon.  Then, we went to Cascade Springs. Wow, what a gorgeous place!  There was a lovely board walk path nestled around the natural springs.  John was most impressed about seeing a brown trout swimming in two and half feet deep clear water.  
Next, we pulled over and ate our sack lunches (sandwiches, carrots, celery, and apples). Around 2:00 PM, we headed down the canyon to the Timpanogos cave entrance (elevation 5,638 feet).  Little did we know, we were in for a crazy HIKE that nearly wore us out! We had to stop a lot to catch our breath several times.  At one point, I didn't think I was going to make the 1.5 miles due to almost passing out. I kept telling myself: "I can do hard things!" Luckily we had a lot of ice cold water to drink from our camel backpacks while hiking up the mountain trail.  Also, many people along the way encouraged us as we reached closer to the cave entrance. 

Finally we made it to the top of the trail 58 minutes later (elevation 6,730)... We refuelled our bodies with granola bars and dried apples while we waited for our tour guide.


We explored the magnificent limestone caves without a jacket, which was okay for us during the summer since we were sweating from the hike, although next time I will bring one just in case I get chilly. There were many interesting cave formations (helicities and anthodites).  My most favorite rock shape was the dazzling "Heart of Timpanogos", which is seen in the bottom right photo below! Hiking Timpanogoes trail and exploring the caves is definitely a wonderful summer bucket list activity to do in Utah!
The hike down the mountain was a piece of cake and I am glad we survived the trip up to Timpanogos Caves! It has been over 18 years since my last hike up there! We had a lot of fun and were extremely sore for several days after our adventurous hike!  We look forward to embracing the future together sharing more laughs, tears, triumphs, failures, joys, fears and so on. A is for Apples: Back to School

On Tuesday, August 21, 2012 was the first day of school for the girls!  We officially have an 8th and 4th grader in our household!  I fought back tears after I dropped off little sister to school (we walked together with our dog Jagger). Big Sis recently got contact lenses.  She is very happy to not have to wear glasses to school any more!  They are growing up too fast! 
In the evening, we made dinner plans with the Sleaper family since Pam was in town from Texas. We shared our favorite treat a sweet and sour apple snicker salad!

 Apple Snicker Salad
1 bag of Granny Smith green apples (10-12 apples)
 1/4 c. lemon juice
1 (16 oz) Cool Whip
2 (3.4 oz) packages of vanilla pudding
2 c. milk
1 (11.18 oz) bag fun size snickers

Directions: Chop the snickers into small pieces, set aside. Cut the apples up into bit size pieces and place them in a bag with lemon juice. The lemon juice will prevent the apples from turning brown and add a refreshing lemon"tart" flavor to the salad.  In a large bowl, whisk together the milk, pudding, and cool whip.  Add the apples then fold the snickers in last. Allow the salad to set up in the refrigerator for a couple hours before serving! Yum!

  Although it was the first day of school, we played like it was a lazy summer day by swimming and boating with the Sleaper family on Utah Lake.  What an A+day!

Frozen Peach Delight

Are you tired of canning peaches? Well, if you have an abundance amount of peaches making a frozen mixture can be a refreshing treat in smoothies, on ice cream, on cake, in oatmeal, on pancakes, etc.

Frozen Peach Delight
25 or more large peaches (the amount is up to you)  
1 (6 oz) frozen orange juice
1 can of water
1 (6 oz) lemon juice
1 can of crushed pineapple, not drained
6 c. sugar
Peel and slice peaches into a large bowl.  In another large bowl mix together all the ingredients and pour on top the sliced peaches.  Mix the liquid mixture well with the peaches.  With a measuring cup, scoop the peach mixture into  containers or zip lock bags. Freeze the mixture.

Chubby's Cafe

Since hubby and I are serious foodies, we love trying new places! We have a local restaurant called Chubby Cafe that would be perfect on the Food Network show Diners Drive Ins, and Dives!  Looking at it from the street, it may appear "a hole in the wall place!"  In fact, hubby and I never noticed it until recently and became huge fans!

 We have tried several items from the menu, which include either beef, chicken, pork, or shrimp.  Inside it is decorated with vintage items like old bikes, sport jerseys, fishing stuff, a wagon, etc.  There is also big flat screen TV that usually has a sport's station going.


There is a Chubby Challenge (one pound of beef basically three patties with cheese and one pound of fries).  If you eat it within 15 minutes, you get a free T-shirt or a $10.00 gift card).  It is fun to look at the wall of fame and shame (people who have tried the Chubby Challenge).


As for the tasty food, most the food we have tried was absolutely amazing that has a southern flair. I love how they toast the buns and add some yummy sauce to the burgers or chicken sandwiches, mmmmm!   So far everything we have ordered have been fresh and served hot! The beer batter fries with pink sauce are out of this world!  The kiddos love the mac and cheese and hush puppies!  The jambalaya and Coleslaw are excellent.  Our top five picks from the menu are the following:

Chocolate Chip Zucchini Bread

We have zucchinis exploding from our garden as well as squash, radishes, cucumbers, peppers, tomatoes, etc.  It is hard to keep up, but we are very grateful to grow our own resources.  Lately, we have been giving away some of our fresh vegetables to our neighbor.  I have made veggie stir fries,  omelets, packaged the vegetables in Ziploc bags to freeze, and made zucchini bread.  
Chocolate Chip Zucchini Bread


This is my most favorite zucchini bread recipe, which we tweaked from an old recipe from my family.  If you like pumpkin spices like nutmeg, cloves, and cinnamon then you would love my zucchini bread recipe.  Additionally, an added bonus is chocolate chips, which my children love the most about my zucchini bread!
Ingredients

Yield: Two bread loaf pans
1 c. sugar
1/4 c. brown sugar
1 c. vegetable oil
3 eggs
1 tsp. vanilla
1 tsp. baking soda
1/4 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1/4 tsp. cloves
3 c. flour 
2 c. shredded zucchini
1 c. of chocolate chips (we used a variety of chocolate chips from Winco bins such as dark chocolate, milk chocolate, or tiny semisweet chips).
Optional you may add: 
1/2 c. nuts or dates instead of chocolate chips.
Directions
Preheat oven 325 degrees and grease two bread pans with either cooking spray or shortening. With a cheese grater, shred two cups of zucchini and set aside. In a large bowl, cream together sugars, oil, and eggs with an electric mixer. Add vanilla, soda, baking powder, and salt, mix well. Then add the spices, flour, and shredded zucchini.  Lastly, mix in the chocolate chips.  Bake for 60-75 minutes (do the tooth pick method to check if done in the middle).  Cool on racks and then gently remove the bread from the pans.

July 2012 Family Fun Events

1. July 4, 2012 We celebrated Independence Day with our usual yummy BBQ and watching fireworks at Pleasant Grove Junior High with family members. Our dog Jagger hated the fireworks, poor pup! 
 2.  July 14, 2012 We went to the Payson Scottish Festival to see the Campbell family who were selling some darling homemade Scottish Dolls. We enjoyed listening to the bag pipes and drums as well as watching the dancers.  As for food/drinks, we bought a large bottle of cream soda, twisted tators, and Boston cream funnel cake! Later we stopped at Daley Freez for dinner, which was my favorite place to eat while living in Payson. We parked at Salem Pond to eat our food. So many memories flooded my mind thinking about my long bike rides to Salem pond, hanging out at Payson Memorial Park listening to band concerts, etc. I had some fun childhood memories growing up in a small town called Payson...
 
Later that same day, we went fishing at Manila Creek! We didn't have much luck catching anything. Little Sis caught a small blue gill, which we put back in the water.  We enjoyed walking in the sand and cool water.  There was an incredible sunset too.  
 3. July 16, 2012 Uncle Nate invited us, sister, nephew, and Hahn girls (my ex step brother's kids) to swim and watch movies at his house. We ate pizza and junk food.
4.  July 20-22, 2012 Lastly, we went to the cabin in the Unitas with my brother Nate, my sister Karen as well her her sons, and Hahn family.  We had a blast playing card games, swimming in a stream, eating BBQ foods, watching movies, busting moves with Just Dance 3, and enjoying the quiet away from city life!

Good-bye Angel: My Recent Miscarriage

Although this sculpture portrays the emotions of a woman who regrets having an abortion, I believe all mothers who have been through a miscarriage, stillborn, or death of a small child can relate to the sorrow and suffering that is showed in this beautiful artwork. It brings tears to my eyes looking at it as well as comfort.

Several weeks ago on May 26, 2012, I had a positive pregnancy result from a blood test.  We were very excited about having baby number three joining our household especially my daughters who would love to have another sibling.  My due date would have been January 25, 2013.  My pregnancy started out very difficult with some morning sickness and many PMS symptoms.  To my surprise around the same time,  I had finger numbness and pain due to a pinched ulnar nerve for a couple weeks, which I believe may have been related to the pregnancy (increased blood flow through out my body) because I did nothing unusual to cause the trauma.  Since I could no longer function normally due to the pain in my wrist, fingers, and elbow, I went to the doctor to see what I should do about it.  He recommended to take some anti-inflammatory pills and steroids and assured me that they would not harm my unborn baby.  So I followed his orders and within a week and a half I was back to normal and pain free.

I made an appointment with my OBGYN around ten weeks of my pregnancy.  A couple weeks before the appointment I noticed my pregnancy symptoms started decreasing (very little morning sickness, etc) as well as unusual cramping in my side.  I didn't think it was too serious because I was heading towards the second trimester and thought the pain was due to my body stretching to make room for my growing uterus. Then two days before my first prenatal check up, I started spotting, ugh.  So there were "flags" indicating what was happening to me, which I completely ignored.  I kept praying that all will be well, but deep down I had a gut instinct that there was something terribly wrong. Finally on June 29, 2012, I saw the doctor.  To my surprise, my blood pressure was elevated which concerned the doctor a bit.  I also had a full exam since it has been awhile since my last pap smear etc and the baby's heart beat wasn't found using the doppler.  He tried to not alarm me because maybe I was off a week or so on my cycle (but I am very regular and was exactly ten weeks that day).  So we were sent to the ultrasound room down the hall.  I had a regular ultrasound at first then a vaginal ultrasound because my baby was very tiny.  The ultrasound tech quietly measured my motionless embryo that averaged around 7 weeks old instead of 10 weeks.  I could not see or hear a heartbeat or any sign of life and knew before they said anything my baby was dead. A few minutes later my doctor came in reviewed the images/looked closely at the screen and diagnosed me with a missed miscarriage (he was very sad for my loss too) then gave me three options a D&C, natural miscarriage, or induced miscarriage using misoprostol (cytotec).  I chose to take the cytotec option since my body was slow in acknowledging my baby's death. I recall being numb while in the office and refused pain pills (for while passing the baby naturally); however, on the way out the door, I broke down in tears.  I was lucky to have my husband right beside me the whole time.  Next, we went to the hospital to get blood work done for a rhogam shot since I am rh negative and a couple hours later I received my shot in my right hip. I went home cried all evening and went to bed since I planned on taking the cytotec pills in the morning.

The next day June 30, 2012 was an emotional roller coaster and one of the worst days of my life.  The thought of my dead baby stuck inside made me very sad. I had extreme anxiety about taking the four cytotec pills (orally) after reading many horror stories online about them (a big mistake for any woman in my situation).  I panicked because I refused pain pills from my doctor the previous day and it was a weekend. What was I thinking, ugh???  I had a miscarriage in 2002 (I was five weeks along) and it was very similar to a heavy period and terrible cramps.  I was afraid that since I was further along it would be more painful with contractions and back pain like labor, ack!  So I ate a small breakfast and took 1000mg of Tylenol.  After a prayer and priesthood blessing from my husband, I finally had the courage to take the cytotec pills.  Thirty minutes later my miscarriage began (started bleeding) and had an unpleasant side effect from the pills (diarrhea).  It was a long physical and emotional day of heavy bleeding, passing clots, and back/abdominal cramping. I used two rolls of toilet paper and several overnight pads. My pain was managed pretty well thankfully with just Tylenol 1000mg (every 4-6 hours) and I applied a heating pad on my abdomen/back. I was okay with my choice.  If faced again with the same situation, I would take cytotec again. A woman's body is truly remarkable in creating and naturally miscarrying a baby.  I was able to have closure after passing my darling angel naturally with help from cytotec to speed up the process.

The highlights during my miscarriage was the love, prayers, and concern for me.  I was truly grateful for the outpouring private messages via Facebook, phone calls, text messages, etc on my behalf.  I recall making ice cream sundaes with my family and painted my nails with my beautiful daughters during my miscarriage. I got a phone call from a wonderful friend who recently went through a miscarriage herself a couple months ago.  She gave me comfort and great advice on what to expect. I also received some gorgeous flowers from my sister in-law and a pomegranate Jamba Juice. I counted my many blessings and was truly grateful for my daughters, husband, my dog Jagger (who stayed by my side the whole time), extended family members, and friends.  I was a brave warrior who survived a miscarriage without any complications.

I followed up with the doctor a week later on July 9, 2012. My blood pressure was still high 159/106, ack.  I stopped bleeding three days after my miscarriage, which I thought was odd. So I had another ultrasound which concluded that I had passed most of my baby, placenta, etc except a little blood matter near my uterus lining.  The doctor ordered another round of cyotec to clear the rest out and I made another appointment for the following week.

On July 16, 2012, I saw my doctor again. I reported that I bleed a little bit then stopped and he seems to think I am done.  I should get a period in 4-6 weeks after my miscarriage.  My blood pressure was still high 139/98.  He is very concerned about it but not ready to put me on blood pressure pills yet since I haven't had a history of high blood pressure in the past.  He encouraged me to lower my salt intake, exercise, and watch my calorie intake. I am also going to try doing Yoga DVDs to help reduce stress.  He strongly recommended that I should try loosing some weight which would make a huge difference in lowering my blood pressure hopefully.

Although I was absolutely devastated and heart broken about my miscarriage, I am trying to trust in the Lord that it happened for a very good reason.  Something must have gone horribly wrong while the baby was developing, it wasn't the right time for me to be pregnant due to medical issues (high blood pressure etc), or other unknown reasons that I may not ever know or understand.  During my emotional meltdowns of grief, I felt my sweet mother with me.  Even though she passed away a year ago, I know deep in my heart that she is always with me especially during difficult times during my life.

Family Hike and BBQ in Provo Canyon


June was an exciting month!  We celebrated John's 37th birthday and Father's Day!  We went on a family hike, swimming at the pool, John and big sis went to ward youth conference at Camp Williams and Heber Valley Girl's Camp while Little Sis and I went to a local Strawberry Days parade with some friends!  Lastly, our dog Jagger got a cute haircut!

On June 9, 2012, We went on the annual local family day breakfast and hike! Our nephews (Malcolm and Justin), nieces (Keli and Lauren) and grandnephew Tristan came along with us. The breakfast included fruit, donuts, scones, and juice.  They did a Smurf theme.  Little sis  made some blue play dough and played several games on the way up to the falls.   We won gift certificates to Chubby's and a Cookie Shop as well as got many coupons from many local food and entertainment sponsors! 
While John's parents were in town, we went up to South Fork Canyon during the evening of June 9, 2012.  We invited several family members!  South Fork has always been our favorite spot that is perfect for grilling meats, lounging under shade, watching the children play in the cold stream, and playing either football or Frisbee. During this trip to the canyon, we celebrated John's 37th birthday!  We had everyone bring their own meats and a side dish to share.  I made potato salad, snickers apple salad, and marinated a couple different chickens.  Then I made an incredible Texas Ranch Cake for the birthday guy!  We had a wonderful time visiting all our family members!
 Jagger got a groovy haircut!  We took him to a local groomer and requested it short. She did a poodle/bichon frise style and tied a purple bandanna around his neck. When we picked him up, we could hardly recognize him!  He is very happy and cool with a new summer hair do!
